Telling it like a fairy tale, it all began many years ago^.At that time, I was working as a "shop boy" for a great figure in the oil world, the one who made known the strengths and weaknesses of extra virgin olive oil to the world: Dr. Nanni Ardoino.These have been years of intense collaboration, of great lessons and great learning: Dr. Nanni knew how to spread "knowledge" in simple words and this has allowed many to understand that oil is a living material that every plant, every countryside, it gives different fruits but above all, that we must never stop "understanding" and studying.Subsequently, Nanni stopped working and I took up the profession of miller never forgetting, and indeed reinforcing, the lessons I had learned. I was lucky enough to work in one of the last mills that still worked the "old way", with water.I took the minced olive paste with a shovel, filled the fiscoli with it one by one and placed them under an ancient press, from the beginning of the century, which gave a soft pressure. Great was the satisfaction, at the end of the day, of seeing the yellow gold drip from the separator.Now this beautiful oil mill doesn't grind anymore.However, the experience was there and it was necessary to combine the work of the "boy" with that of the miller and make the oil. Obsolete term by now, it simply means, oil seller.The birth of PIETRANTICA 1999 was only the final stage of this long journey.I delight in looking for the best extra virgin olive oils, the most beautiful olives and so on. I received a lot of stimulus for research from customers to whom I am grateful.
